Wanna restore good health? How about you add some superfoods into your meals. There’s a wide variety of foods we tend to ignore. Kales for examples. How many of us genuinely have Kales for breakfast? And I recently discovered there’s something called ‘Kale Breakfast Bowl’. Like kale based breakfasts. Just a whole bowl full of health. I’ll try that sometime.
Eating greens first thing in the morning is an easier way to get them into your diet. I made it and I honestly enjoyed.
This Kale & Mushroom Stuffed Omelette recipe is from a book called BREAKFAST WITH THE KING by Cooking With Jaz (http://cookingwithjaz.com) It’s a really simple and practical dish; doesn’t take up much of your time to prepare.
Let me share the recipe as it is in the book( You can thank me later 😊)
1 chopped onion
1 cup chopped mushrooms
4 cups chopped Kales
1 Minced clove garlic
2 teaspoons Spanish paprika
1 teaspoon black pepper
2 tablespoons vegetable oil
2 tablespoons olive oil
Start by cooking the chopped onion and garlic with olive oil on a pan.
When the onions are translucent, add the mushrooms and sautee for a few minutes.
After 3 minutes, add the kale and sautee for about 5 minutes.
Remove from the heat, drain the excess water that the kale has released and return to heat to sautee again. Add the paprika, salt and black pepper at this point and sautee for a few more minutes.
Once the kale is ready, remove from the heat and prepare the omelettes.
For the omelettes, break 2 eggs in a cup and whisk with a fork. Season with salt and cook both sides evenly on a pan using the vegetable oil. Repeat the process for the other omelette. Remove from heat once they are ready.
Serve the kale in between the eggs and fold.
