Now let’s make something I have everyday when the craving strikes. I’m talking about potato cravings. I could eat potatoes all day. And Viazi Karai and french fries always do it for me. Viazi Karai is one of Mombasa’s celebrated street food. The old and young alike love it because when it comes to really good tasty food; there’s no limits.
For this real simple dish you will need :
5 potatoes, peeled, diced and blanched
2 cups Gram flour/All purpose flour
1 cup water
Coriander for garnish (optional)
In a small bowl mix flour, water, pinch of salt and tumeric powder. Add the water a little at a time till you get the best batter. Not too thick, not too runny.
Add the potatoes and mix carefully to ensure each piece is well coated.
Heat about 2 cups of vegetable oil in a deep frying pan till its hot enough to cook the potatoes. Test by dropping a piece of potatoes in the oil.
Once you are certain it’s good to go, use a tablespoon to pick and drop the battered potatoes into the oil. Pick up one at a go because you don’t want the potatoes clustering.
Keep doing this until all the potatoes are done.
Serve with any preferred condiments. On the street eateries it’s normally served with Tamarind Sauce which always adds a certain kick. But you could still use Ketchup or chilli sauce.
