If you are big on quick and easy meals then this is for you. Good thing about this dish is, you can throw anything you have into the mix so long as you still have your eggs and Noodles.
It is especially a great breakfast dish but you could have it any time of the day really.
1 70g pack of Indomie Noodles; soaked in warm water
2 Yellow yolk Eggs
Green, Red & Yellow Bell peppers; thinly chopped
1 Red onion; thinly chopped
2 tablespoons vegetable oil
Coriander for garnish
Drain the Noodles.
Break your eggs into a sizeable bowl. Add bell peppers, onions and some of the Noodle seasoning. Whisk that together before you add the Noodles.
Heat some oil on a nonstick saucepan on high heat. Make sure it’s hot enough before you pour the egg mixture into it.
Add the egg mixture. Spread it on the pan nicely. Let it cook well before you flip it on the other side.
Serve hot;sliced, garnished with some chopped coriander and pepper.
