You can never have enough soup. Trust me… I have been feeling super ‘soupy’ lately. And I love that feeling because I get to work with what I have at the moment.
With this soup I used some leftover chicken I had. It adds a good flavour and texture to the soup. I used:-
2 70g packs of Indomie Noodles
2 cups leftover chicken cut into small pieces
Green, Yellow and Red Bell Peppers; chopped
1 Red onion; chopped
1 teaspoon minced Garlic
1 teaspoon crushed Ginger
1 tablespoon of Butter
2 cups of hot water
On a hot pan melt butter. Add onions, garlic and ginger. Stir as they fry for a few seconds. Add chicken, bell peppers and Noodle seasoning from the package.
Stir and Cover for about 30 seconds to allow the chicken to cook (if you are not using leftovers). Add noodles followed by hot water. Cover and cook for 3 minutes.
Serve hot (you can add a dash of chilli to add some kick to it)
