STIR FRIED CURRY NOODLES WITH SHREDDED CHICKEN

This is A Quick, Easy & Tasty Dinner. That’s the much I can tell you for now… I’m having a serious writer’s block. Been eating too much I guess 😂

So I love Noodles & Chicken. And those 2 go well together. They cook fast and they’re so tasty. So putting them together is never a bad idea. The curry powder adds a unique flavour thanks to the combination of various savory and sweet spices. There might be some heat in it depending on the type of curry powder you use (Curry powders vary in composition).

Let’s get down to it. You will need:-

1 packet Indomie noodles,
Curry Powder
100g chicken breast
1 Tbs Vegetable oil
1 egg
1 cup assorted Peppers, chopped
1 cup of hot water

DIRECTIONS
Par-cook the noodles in boiling water. Set aside.
Poach chicken in a separate pot. Shred and set aside.
Heat vegetable oil in a wok. Crack in the egg and stir with a cooking spoon.
Add chicken shreds and peppers, then add the partially cooked noodles.
Mix half tablespoon of curry powder + Noodle seasoning with 1 cup of hot water, add to wok. Mix well and fry until noodles are cooked.

Serve hot garnished with some fresh coriander.

CHEERS!

    1. Hi Stephanie. Shredding chicken is pretty. First of all boil the chicken/or at least make sure it cooked (may be leftover) You can use your hand to pull out the bits of meat from the bones. You can use a fork to pick the meat. Or you can use a food processor. Works best for raw chicken as well as cooked.
