Avocado season is back & I am pretty excited!🤗
Chimichurri is an uncooked sauce normally used as condiment for grilled meats. It is made of finely chopped/blended parsley, coriander, minced garlic, olive oil, oregano, and wine vinegar. The dominant flavoring is usually parsley, garlic, red pepper flakes, and fresh oregano.
Avocado Chimichurri Sauce is made of fresh herbs, garlic, olive and vinegar blended with creamy avocado for a decadent sauce that will take your grilled meats, vegetables & pasta dishes to another level.
Making chimichurri takes less than 5 minutes because the food processor or blender does all the work for you in seconds. And if you make it in large quantities, you can store it in an air tight container and keep refrigerated for upto 2 days.
1 avocado, cut in chunks
3/4 cup cilantro
1/2 cup parsley
3 garlic cloves
1 red onion
2 tablespoons wine vinegar
2 limes, juiced (approx. 1/4 cup)
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/4 cup water
Combine all of the ingredients in a blender or a food processor and blend until smooth.
It’s as easy as that! 🙂
You can serve it with just about anything; I’ve mostly had it with meat, vegetables, pasta & toast.
