These Egg Muffins have gone a long way in fixing my messed up breakfast routines. I rarely eat in the morning and these are really helping. I can make them a day before and refrigerate or make them fresh in the morning. And the good thing is, you can load them with a variety of other breakfast foods. They’re really easy to make,just make sure you have an oven or microwave. Yes, a microwave. Have you ever made Mug cakes? If yes, you can actually make this eggs the same way.
1/2 cup of Bacon, cooked & cut in small pieces
1/2 cup Cheddar cheese, grated
1 Green bell pepper, chopped
1 Red bell pepper, chopped
1 Red Onion, chopped
1/2 cup coriander, chopped
1/2 teaspoon Mixed spices
1/2 teaspoon chilli(optional)
Salt to taste
1.Preheat oven to 350 degrees.
2.In a big mixing bowl, combine eggs, mixed spices & chilli as well as salt to taste; and whisk well.
3.Stir in cheddar cheese, bacon, coriander salt, and the peppers. Leave some little bacon & coriander.
4.Divide mixture evenly among 9 greased muffin cups.
5.Sprinkle with remaining bacon & coriander.
6. Bake at 350 degrees for 20 minutes or until centers are perfectly set.
