SIMPLE APPLE HAND PIES

Apple Hand Pies make a great breakfast and they’re also great for dessert. Holidays are coming up and maybe these pies should feature on your menus. They are really easy to make and won’t cost you much money or time.

And the exciting thing is, my crust is really really easy to make so I hope you get to try this recipe out.

You will need:-

3 Apples, grated
1 1/2 cups of Self Raising flour
1 cup Brown sugar
2 tablespoons of Margarine/Butter
2 Egg, cold
1/4 cup water
1 teaspoon Freshly minced Ginger

DIRECTIONS.

1.In a bowl, thoroughly mix the flour, sugar & margarine. You can mix using your hands or an electric mixer at low speed till it looks crumby.
2.Add 1 egg and mix it in lightly. Gradually add water a tablespoon at a time while mixing till the dough can hold together but is still firm.
3.Cover with a cling film and let it rest refrigerated for 30 minutes.
4.Flour a dry worktop and place the dough for rolling.
Using a rolling pin, flatten the dough to a about 1cm or 1/4 inch thickness.
5.Using a round cookie cutter, cut out 12 pieces of dough.
6.In a bowl mix the apples and the ginger.
7.Place a tablespoon of apple mixture at the centre of 6 pieces then use the other 6 to cover the pies.
Use a fork to seal the edges.
8.Place the pies on a baking tray, poke some holes on the top.
9.Break and thoroughly beat the second egg. Using a kitchen brush, light brush the egg on the pies tops.
10.Bake in the centre of a preheated oven for 20 minutes at 180°C
11. Allow to cool for 2 minutes before serving.
